For the Spicy Chili Honey:

Instructions

1. Prepare the Cheese Filling:

  1. In a medium mixing bowl, combine the crumbled feta, ricotta cheese, and thyme leaves (if using).
  2. Stir until the mixture is smooth and well combined. Set aside.

2. Prep the Phyllo Pastry:

  1. Unroll the phyllo pastry sheets and keep them covered with a damp kitchen towel to prevent drying out.
  2. Cut each sheet in half lengthwise to create 12 long strips.

3. Assemble the Rolls:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place one strip of phyllo pastry on a clean work surface and lightly brush it with melted butter or olive oil.
