Instructions
1. Prepare the Cheese Filling:
- In a medium mixing bowl, combine the crumbled feta, ricotta cheese, and thyme leaves (if using).
- Stir until the mixture is smooth and well combined. Set aside.
2. Prep the Phyllo Pastry:
- Unroll the phyllo pastry sheets and keep them covered with a damp kitchen towel to prevent drying out.
