  2. Mix Strawberries and Yogurt: In a medium mixing bowl, thoroughly combine the diced strawberries with the strawberry Greek yogurt until you have a creamy, uniform fruity yogurt mixture with visible strawberry pieces throughout.
  3. Form the Yogurt Bites: Drop spoonfuls of the yogurt mixture onto the lined baking sheet, spacing them evenly apart. Aim to make about 8 bites, each approximately 2 inches in size. You can use an ice cream scoop or large spoon to keep them consistent.
  4. Freeze the Yogurt Bites: Transfer the baking sheet with the yogurt bites to the freezer and allow them to freeze completely until solid, which takes about 30 minutes. The bites should be firm enough to handle without losing their shape.
  5. Melt the Chocolate: Place the dark chocolate chips and coconut oil (if using) in a microwave-safe bowl. Heat in 30-second intervals, stirring between each interval, until the chocolate is completely melted and smooth. Let the melted chocolate cool at room temperature for 3-5 minutes to prevent it from melting the frozen yogurt bites when dipping.
  6. Coat with Chocolate: Remove the frozen yogurt bites from the freezer. Using a fork, dip each bite into the melted chocolate, ensuring it’s completely coated. Return each chocolate-covered bite to the parchment-lined baking sheet. If desired, sprinkle with a pinch of sea salt immediately after dipping while the chocolate is still wet.
