  • 4 cloves garlic (minced)
  • 3 tbsp all purpose flour
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt
  • 1/4 tsp oregano
  • 1 cup milk
  • 1/2 cup Parmesan cheese

Instructions

  1. Melt the Butter: In a small saucepan over medium heat, melt the butter completely until it starts to bubble slightly but doesn’t brown. This creates the perfect foundation for your sauce.
  2. Cook the Garlic: Add the minced garlic to the melted butter and cook for 30 seconds, stirring constantly. The garlic should become fragrant but not brown, as browning can create bitterness in the sauce.
  3. Create the Roux: Whisk in the flour, black pepper, salt, and oregano until well combined with the butter-garlic mixture. Continue whisking for about 1 minute to cook the flour and remove any raw taste. The mixture should form a thick paste.
  4. Add the Milk: Slowly pour in the milk while continuously whisking to prevent lumps from forming. Start with a small amount and gradually add the rest, ensuring each addition is fully incorporated before adding more.
  5. Thicken the Sauce: Continue whisking occasionally for about 3-5 minutes until the sauce reaches your desired thickness. The sauce should coat the back of a spoon but still be spreadable.
  6. Finish with Cheese: Remove the saucepan from heat and stir in the Parmesan cheese until completely melted and the sauce is smooth. The residual heat will melt the cheese without risking separation.

Notes

  • For a thinner sauce, add additional milk, 1 tablespoon at a time.
  • This sauce can be made ahead and refrigerated for up to 3 days. Reheat gently on low heat, adding a splash of milk if needed to restore consistency.
