Ingredients

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup water
  • 2 cups chopped walnuts
  • 1 1/2 teaspoons vanilla

Instructions

  1. Prepare the Syrup Base
  2. Combine the sugar, corn syrup, and water in a medium-size heavy-duty saucepan. Place over medium heat and stir continuously until the sugar has completely dissolved and the corn syrup becomes clear. Continue cooking and stirring until the mixture comes to a boil, then allow it to boil undisturbed for 3-4 minutes.
  3. Add Walnuts and Flavor
  4. Add the chopped walnuts and vanilla to the boiling syrup. Stir to combine all ingredients thoroughly. Continue cooking until the mixture returns to a boil, then stir constantly while boiling for an additional 3-4 minutes to ensure even coating of the walnuts.
  5. Cool and Store
  6. Remove the pan from heat and allow the wet walnuts to cool completely. Once cooled, transfer to an airtight container. The wet walnuts can be stored at room temperature.

Notes

  • Wet walnuts are a classic ice cream topping, particularly popular with butter pecan or vanilla ice cream. For best results, use fresh walnuts as they provide the best flavor and texture. The mixture will thicken as it cools. If it becomes too thick when stored, gently warm it before serving.
