Ingredients

  • 1 ½ pounds ground beef

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 red bell pepper, diced

  • 5 large potatoes, peeled and cut into chunks or diced

  • 1 can (10.75 oz) condensed cream of mushroom soup

  • ½ cup milk

  • 1 cup shredded cheddar cheese

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ¼ teaspoon paprika

  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

1. Brown the Beef & Vegetables

In a skillet over medium heat, cook the ground beef with the chopped onion, minced garlic, and diced red bell pepper. Sauté until the beef is fully cooked and the vegetables are tender. Drain any excess fat.

2. Prepare the Creamy Sauce

In a small bowl, whisk together the condensed cream of mushroom soup, milk, salt, pepper, and paprika until smooth and combined.

3. Layer the Casserole

  • Place half of the diced potatoes in the bottom of your slow cooker.

  • Add half of the cooked beef mixture on top of the potatoes.

  • Spoon over half of the soup mixture.

  • Repeat the layers with the remaining potatoes, beef mixture, and soup sauce.

4. Slow Cook to Perfection

Cover and cook on low for 5-6 hours, or until the potatoes are tender and fully cooked.

5. Add Cheese & Finish

Sprinkle the shredded cheddar cheese over the top of the casserole. Cover and cook for an additional 20 minutes, or until the cheese is melted and gooey.

6. Garnish & Serve

 

Before serving, sprinkle freshly chopped parsley for a pop of color and flavor.
