Description

A creamy, protein-packed mousse that combines the rich flavor of peanut butter with smooth cottage cheese for a delicious and nutritious treat. Perfect for a healthy dessert or satisfying snack.

Ingredients

Scale
  • 2 cups cottage cheese
  • 1/2 cup peanut butter (creamy or chunky)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Chopped peanuts or chocolate chips for garnish

Instructions

  1. Blend the ingredients: In a blender or food processor, combine cottage cheese, peanut butter, honey, and vanilla extract. Blend on high speed for 2-3 minutes until completely smooth and no cottage cheese curds remain. Scrape down the sides of the blender as needed to ensure everything is well incorporated.
  2. Portion the mousse: Carefully spoon the creamy mousse mixture into four individual serving glasses or ramekins. For a more elegant presentation, use a piping bag with a large tip to pipe the mousse into the glasses.
  3. Chill the mousse: Place the filled glasses in the refrigerator and allow them to chill for at least 1 hour. This chilling time is essential as it helps the mousse set and allows the flavors to meld together beautifully.
  4. Garnish and serve: Just before serving, top each mousse with a sprinkle of chopped peanuts or chocolate chips for added texture and visual appeal. For an extra special touch, you can add a small drizzle of honey or melted chocolate.

Notes

  • For a smoother texture, use small curd cottage cheese or strain the cottage cheese first to remove excess liquid.
  • This mousse can be made up to 2 days in advance and stored in the refrigerator.
  • For a lower sugar option, use a sugar-free sweetener or reduce the amount of honey/maple syrup.
  • Add a tablespoon of cocoa powder for a chocolate peanut butter version.
