Description

If you’re looking for a stress-free and delicious breakfast to start your day, this Overnight Breakfast Casserole is the perfect solution! Packed with juicy berries, hearty bread, and natural sweetness, this make-ahead dish is a lifesaver for busy mornings, brunch gatherings, and holiday breakfasts.

Ingredients

Scale
  • 6 cups berries (32 oz, use a mix of strawberries, blueberries, raspberries, or blackberries)
  • 1 lb thick bread (French bread, brioche, or whole grain bread works best)
  • 1 1/3 cup applesauce or mashed banana
  • 2/3 cup milk of choice (dairy or non-dairy options work well)
  • 2/3 cup egg whites or additional milk of choice
  • 1/4 cup pure maple syrup, agave, or honey
  • 1 tsp pure vanilla extract (optional, but enhances flavor)

Instructions

1. Prepare the Bread

If the bread is not slightly hard, let it sit uncovered for a day before using, or bake the slices at 300°F (150°C) for 15 minutes to dry them out. This helps the casserole absorb the liquid without becoming mushy.

2. Assemble the Casserole

  • Grease a 9×13-inch baking dish.
  • Cut the bread into 1-inch cubes and layer them evenly in the dish.
  • In a bowl, whisk together the applesauce, milk, egg whites, maple syrup, and vanilla.
  • Pour the mixture evenly over the bread, ensuring every piece is soaked.
  • Spread the berries evenly on top.

3. Refrigerate Overnight

  • Cover the casserole with plastic wrap or foil and refrigerate overnight. This allows the bread to soak up the flavors for a rich and custardy texture.

4. Bake & Serve

  • The next morning, preheat the oven to 350°F (175°C).
  • Remove the cover and bake for 1 hour, or until the bread is lightly golden and set in the center.
  • Serve warm or cold with extra berries, a drizzle of maple syrup, or a dusting of powdered sugar!
  • Cook Time: 1hour
