- 1 1/2 cups granulated sugar, divided
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1/4 cup lemon juice (freshly squeezed for best flavor)
- Zest of 1 lemon
- 2 cups hot water
Instructions
Step 1: Preheat & Melt Butter
- Preheat oven to 350°F (175°C).
- Place butter in a 9×13-inch baking dish and set it in the oven to melt while it heats up.
Step 2: Prepare the Batter
- In a medium bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
- Stir in milk until just combined.
- Pour the batter over the melted butter in the baking dish—do not stir.
Step 3: Add the Lemon Mixture
- In another bowl, mix the remaining 1/2 cup sugar, lemon juice, and lemon zest.
- Sprinkle this lemony mixture evenly over the batter.
Step 4: Add Hot Water & Bake
- Carefully pour 2 cups of hot water over the top—again, do not stir.
- Bake for 40-45 minutes until the top is golden brown and crispy.
