Description

A rich and indulgent low-carb dish that combines tender shredded chicken with creamy ranch, bacon, and cheese for an irresistible comfort food that’s perfect for keto diets.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 (8 ounce) package cream cheese, softened
  • 1 (1 ounce) packet ranch seasoning mix
  • ½ cup water
  • ½ cup bacon, cooked and crumbled
  • ½ cup cheddar cheese, shredded
  • ¼ cup green onions, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken
  2. Place the chicken breasts in the bottom of the slow cooker. If desired, brush with a tablespoon of olive oil to prevent sticking and add a touch of richness. Arrange the chicken pieces in a single layer for even cooking.
  3. Mix Cream Cheese and Seasoning
  4. In a medium bowl, combine the softened cream cheese with the ranch seasoning mix until well incorporated. Using a spatula, carefully spread this mixture over the chicken in the slow cooker, making sure to cover each piece evenly for maximum flavor infusion.
  5. Add Water
  6. Pour half a cup of water around the sides of the chicken, being careful not to wash off the cream cheese mixture. This creates steam in the slow cooker that helps keep the chicken moist during the long cooking process.
  7. Cook
  8. Cover the slow cooker with its lid and set it on low for 6-7 hours or on high for 3-4 hours. The chicken is done when it’s tender enough to shred easily with a fork and has reached an internal temperature of 165°F (74°C).
  9. Shred and Combine
  10. Once the chicken is fully cooked, use two forks to shred it directly in the slow cooker. The chicken should easily pull apart. After shredding, add the crumbled bacon and shredded cheddar cheese, then stir everything together until well combined.
  11. Melt the Cheese
  12. Cover the slow cooker again and let it sit for about 15 minutes. This allows the cheese to fully melt and the flavors to blend together beautifully, creating a cohesive and creamy texture throughout the dish.
  13. Season and Serve
  14. Taste the mixture and adjust with salt and pepper as needed. Before serving, garnish generously with freshly chopped green onions for a pop of color and fresh flavor contrast to the rich, creamy chicken mixture.

Notes

  • For a spicier version, add diced jalapeños or a dash of hot sauce.
  • This dish is versatile – serve it in lettuce wraps, on top of cauliflower rice, or stuffed in bell peppers to keep it keto-friendly.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
  • For best results, use full-fat cream cheese as it creates the creamiest texture and adheres to keto principles.
  • If the mixture becomes too thick after cooling, add a splash of heavy cream when reheating.
