  • 2 Honeycrisp apples, thinly sliced

  • 4 cups mixed greens

  • ¼ cup red onion, thinly sliced

  • ¼ cup dried cranberries or pomegranate seeds

Dairy

  • ½ cup feta cheese, crumbled

Nuts & Seeds

  • ⅓ cup walnuts or pecans, toasted

Condiments

  • 1 teaspoon Dijon mustard

  • 1 tablespoon honey

Oils & Vinegars

  • 1 tablespoon apple cider vinegar

  • 3 tablespoons olive oil

Seasoning

  • Salt and black pepper, to taste


Instructions

  • Prepare the Vinaigrette
    In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, olive oil, salt, and black pepper until smooth and emulsified. Set aside.

  • Assemble the Salad
    In a large salad bowl, combine the mixed greens, sliced apples, red onion, and dried cranberries (or pomegranate seeds). Toss gently to mix.
