-
3 cloves garlic, minced — For depth of flavor.
-
4 cups beef broth — Rich, comforting soup base.
-
1 can (14.5 oz) diced tomatoes (with juices) — Adds acidity and moisture.
-
1 cup frozen mixed vegetables — Carrots, peas, corn, etc.
-
1 teaspoon Italian seasoning — Herbal touch.
-
Salt and pepper, to taste — Essential seasoning.
-
2 cups uncooked egg noodles — Hearty noodles to soak up the broth.
Instructions
-
Cook the Ground Beef:
In a large pot or Dutch oven, cook the ground beef over medium heat until browned and no longer pink, about 5–7 minutes. Break it apart as it cooks. Drain any excess fat. -
Sauté Onion and Garlic:
Add chopped onion and minced garlic to the pot. Sauté for about 3 minutes, stirring occasionally, until the onion is softened and the garlic is fragrant. -
Add Broth, Tomatoes, and Vegetables:
Pour in the beef broth, diced tomatoes (with juices), and frozen mixed vegetables. Add the Italian seasoning, salt, and pepper. Stir to combine. -
Bring to Boil & Cook Noodles:
Increase the heat and bring the soup to a boil. Add the uncooked egg noodles and cook according to package directions, usually 7–8 minutes, until the noodles are tender. -
Taste and Adjust:
Taste the soup and adjust seasoning with more salt and pepper if needed.
-
Serve & Enjoy:
Ladle the hot soup into bowls and serve warm. Optionally, garnish with fresh parsley or a sprinkle of Parmesan cheese for extra flavor!
