Description
Luxuriously creamy and rich mashed potatoes made using Gordon Ramsay’s technique for the ultimate side dish. This recipe creates perfectly smooth potatoes with deep buttery flavor and a silky texture that melts in your mouth.
Ingredients
Scale
- 1.8 kg Russet or Yukon Gold potatoes
- 3 garlic cloves (optional)
- 75g melted salted butter
- 240ml hot milk or cream
- Salt and pepper to taste
Instructions
- Prepare the potatoes
- Begin by peeling the potatoes and cutting them into even quarters. Place them in a large pot of cold salted water, adding the garlic cloves if using. Starting with cold water ensures the potatoes cook evenly from the inside out.
- Cook until tender
- Bring the pot to a boil over high heat and cook the potatoes uncovered for approximately 15 minutes, or until they are fork-tender. You should be able to easily slide a fork into the potatoes with no resistance.
- Steam dry the potatoes
- Thoroughly drain the potatoes in a colander, then return them to the hot pot. Allow them to sit for 2 minutes to steam dry. This crucial step removes excess moisture, preventing watery mashed potatoes.
- Add butter and begin mashing
- Add the melted butter to the potatoes and begin mashing them gently. Using a potato masher or ricer (rather than a food processor) prevents the potatoes from becoming gluey by not overworking the starches.
- Incorporate the hot liquid
- Gradually add the hot milk or cream while continuing to mash, working it in slowly until you reach your desired consistency. Using hot liquid is essential as cold milk would cool down the potatoes and make them stiff.
- Season to perfection
- Season the mashed potatoes generously with salt and freshly ground black pepper to taste, stirring them in thoroughly to distribute the flavors evenly throughout.
- Serve immediately
- Serve the mashed potatoes right away while they’re still hot and at their most luxurious texture. If needed, you can keep them warm covered in a low oven for a short time.
Notes
- For the creamiest results, use Yukon Gold potatoes which have a naturally buttery flavor and creamy texture.
- Warming the milk or cream before adding prevents the potatoes from cooling too quickly.
- A potato ricer will give you the smoothest, fluffiest results without overworking the potatoes.
- For extra flavor, infuse the milk with herbs like rosemary or thyme before adding.
- For a lighter version, you can substitute some of the cream with chicken stock.
