Ingredients
– 2 cups all-purpose flour
– 1½ teaspoons baking powder
– 1 teaspoon ground cinnamon
– ¼ teaspoon ground nutmeg
– ¼ teaspoon salt
– 1½ cups milk
– ¼ cup granulated sugar
– 2 large eggs
– 1 teaspoon pure vanilla extract
– Vegetable oil for frying
– Powdered sugar for dusting
Instructions
Step 1: Prepare the Wet Ingredients
First, get those eggs nice and foamy – beat them until they’re light and fluffy. Then pour in your milk and vanilla, giving everything a good stir.
Step 2: Mix the Dry Ingredients
In another bowl, mix your dry ingredients: flour, baking powder, cinnamon, nutmeg, salt, and sugar.
Step 3: Combine Wet and Dry Mixtures
Pour your wet ingredients into the dry and stir until you’ve got a smooth batter.
Step 4: Heat the Oil
Heat about ¾ inch of oil in a heavy pot or deep skillet to 375°F.
Step 5: Fry the Bites
Use a cookie scoop to drop spoonfuls of batter into the hot oil – it makes the perfect bite-sized portions! Let them fry until golden brown on each side (about 1–2 minutes per side).
Step 6: Drain and Dust
Once they’re done, drain them on paper towels and while they’re still warm, give them a generous dusting of powdered sugar.
