Description

A perfectly decadent sandwich combining the rich, runny goodness of fried eggs with melted cheese between golden, buttery toast. This hearty creation makes for an excellent breakfast, brunch, or comfort food lunch option.

 


Ingredients

  • 4 large eggs
  • 4 slices thick Texas style bread
  • 2 slices Colby jack cheese
  • 2 slices pepper jack cheese
  • Butter for frying and spreading
  • Salt and pepper to taste

Instructions

  1. Prepare the bread: Butter one side of each piece of bread generously with softened butter, ensuring even coverage from edge to edge. Set aside while you prepare the eggs.
  2. Cook the eggs: In a frying pan, melt a small amount of butter over low heat. Once melted, crack the eggs into the pan, being careful not to break the yolks. Season with salt and pepper to taste. Cook until the whites are set and the yolks reach your preferred doneness. Remove from heat.
  3. Assemble the sandwich: In a separate frying pan over medium-low heat, place a slice of bread buttered-side down. Immediately add a slice of Colby jack cheese on top of the bread.
  4. Add eggs and more cheese: Carefully place two fried eggs on top of the cheese slice. Add a slice of pepper jack cheese on top of the eggs, then cover with another slice of bread, buttered-side facing up.
  5. Cook until golden: Cover the pan with a lid to help the cheese melt thoroughly. Cook until the bottom bread is golden brown, about 3-4 minutes, then carefully flip the sandwich. Continue cooking until the second side is equally golden and all cheese is completely melted, another 2-3 minutes.
  6. Serve immediately: Remove from heat, cut in half diagonally if desired, and serve while hot and cheese is still gloriously melty.

Notes

  • For best results, use room temperature butter for easier spreading on the bread.
  • Using a combination of cheeses creates a more complex flavor profile.
  • If you prefer a runny yolk, cook the eggs sunny side up or over easy. For firmer yolks, break them while cooking or flip for over medium/hard.
  • Add a thin layer of mayo instead of butter on the outside of the bread for extra crispy exterior.
