Description
The blistered cherry tomatoes and marinated mozzarella create a light yet satisfying sauce that perfectly complements the ravioli, while the balsamic glaze adds a touch of sophistication. It’s a brilliant way to elevate store-bought pasta into something truly spectacular!
Ingredients
Scale
- 1 (8 oz) package of Trader Joe’s caprese ravioli
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 6 oz marinated mozzarella balls
- Balsamic glaze, to taste
- Fresh basil ribbons, to taste
Instructions
- Cook the Ravioli
- Bring a medium pot of salted water to a boil
- Add the Trader Joe’s caprese ravioli and cook according to package instructions, usually 4-5 minutes
- Be careful not to overcook—the ravioli should be al dente
- Drain well, but do not rinse
- Blister the Tomatoes
- While the ravioli cooks, heat olive oil in a large skillet over medium heat
- Add the halved cherry tomatoes to the hot oil
- Let the tomatoes cook undisturbed for 1-2 minutes to begin blistering
- Stir occasionally and cook for another 2-3 minutes until the tomatoes soften and begin to release their juices
- The tomatoes should be slightly collapsed but still maintain some shape
- Combine the Ingredients
- Add the drained ravioli to the skillet with the blistered tomatoes
- Gently fold the ravioli into the tomatoes, being careful not to break the pasta
- Add the marinated mozzarella balls, distributing them evenly throughout the dish
- Spoon 1-2 tablespoons of the mozzarella marinade over the mixture for extra flavor
- Cover the skillet and reduce heat to medium-low
- Heat Through
- Let the covered mixture cook for 3-4 minutes
- This step allows the flavors to meld and everything to heat through evenly
- The cheese doesn’t need to fully melt—just warm enough to become soft
Finish and Serve
-
- Transfer the ravioli mixture to serving plates or a serving platter
- Drizzle with balsamic glaze in a decorative pattern
- Sprinkle generously with fresh basil ribbons
- Serve immediately while hot
- Optional: offer additional balsamic glaze on the side
