Description
A refreshing summer salad that perfectly balances sweet fruits with crisp cucumber and zesty lime. This vibrant dish makes an ideal side for barbecues or a light lunch option.
Ingredients
Scale
- 3 cups strawberries, hulled and diced
- 3 cups watermelon, seeded and cubed
- 1 English cucumber, chopped
- 1/2 red onion, sliced
- 1 handful fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 fresh lime, juiced
- 1/4 teaspoon kosher salt
- Fresh ground black pepper, to taste
Instructions
- Prepare the Ingredients
Wash all produce thoroughly. Hull and dice the strawberries into bite-sized pieces. Remove seeds from the watermelon and cut into similar-sized cubes as the strawberries. Chop the English cucumber into quarters lengthwise, then slice into bite-sized pieces. Thinly slice the red onion and roughly chop the mint leaves. - Combine the Salad
In a large serving bowl, add the prepared strawberries, watermelon, cucumber, red onion, and chopped mint leaves. Ensure all ingredients are evenly distributed throughout the bowl for balanced flavor in every bite. - Add Dressing and Serve
Drizzle the olive oil and fresh lime juice over the salad. Season with kosher salt and freshly ground black pepper. Gently toss all ingredients together until everything is lightly coated with the dressing. Taste and adjust seasoning if needed. Serve immediately for maximum freshness or refrigerate for 2 hours before serving for a more chilled experience.
Notes
- For best results, prepare this salad no more than 2-3 hours before serving to maintain the crisp texture.
- If preparing in advance, add the dressing just before serving to prevent the salad from becoming soggy.
- For extra flavor, you can add crumbled feta cheese or a handful of toasted nuts.
- To make it a complete meal, add grilled chicken or shrimp.
