Ingredients
- 2 lbs potatoes, thinly sliced (Yukon Gold or Russet recommended)
- 1/4 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- Salt and pepper to taste
- Grated Parmesan cheese (optional, for a cheesy, crispy topping)
Instructions
1. Preheat Your Oven
Preheat your oven to 375°F (190°C). Lightly grease a round baking dish with olive oil or cooking spray to prevent sticking.
2. Mix the Balsamic Glaze
In a mixing bowl, whisk together balsamic vinegar, olive oil, minced garlic, chopped thyme, salt, and pepper. This rich, herby glaze will add depth to the potatoes.
3. Layer the Potatoes
- Arrange half of the sliced potatoes in the baking dish, overlapping them slightly.
- Drizzle evenly with half of the balsamic-thyme mixture.
- Add the remaining potato slices on top and pour the rest of the glaze over them.
- Press down gently to ensure the layers are packed.
4. Bake Covered
Cover with foil and bake for 45 minutes. The foil traps steam, allowing the potatoes to absorb all the flavors while becoming tender.
5. Get That Crispy Finish
- Remove the foil and, if desired, sprinkle grated Parmesan on top for extra crispiness.
- Bake uncovered for 15-20 minutes until the edges turn crispy and golden brown.
6. Serve Warm
