They’re perfect for holidays, gatherings, or simply indulging in a homemade treat.

Ingredients

For the Crust: 2 cups graham cracker crumbs 1/2 cup unsalted butter, melted 1/4 cup sugar

For the Cheesecake Filling: 16 oz cream cheese, softened (use a dairy-free version for an alternative) 1/2 cup sugar 2 large eggs (substitute with 1/4 cup unsweetened applesauce for vegan) 1 teaspoon vanilla extract

For the Cinnamon Swirl: 1/4 cup unsalted butter, melted 1/4 cup brown sugar, packed 1 tablespoon cinnamon

For the Glaze: 1 cup powdered sugar 2-3 tablespoons milk (use almond or oat milk for dairy-free) 1/2 teaspoon vanilla extract

Pro Tip: Using high-quality cinnamon will enhance the flavor of these blissful bars

Instructions

  1. Prep the Pan & Oven Preheat your oven to 325°F (165°C). Line a 9×9-inch pan with parchment paper, letting it hang over the edges for easy removal.
  2. Make the Graham Cracker Crust In a bowl, mix together the graham cracker crumbs, melted butter, and sugar. Press this mixture evenly into the base of your prepared pan. Bake for 10 minutes, then let it cool.
  3. Prepare the Cheesecake Filling In a large bowl, beat softened cream cheese and sugar until creamy and smooth. Add in eggs (or applesauce) and vanilla, mixing until well combined.
  4. Make the Cinnamon Swirl In a small bowl, blend together the melted butter, brown sugar, and cinnamon.
  5. Assemble the Bars Spread the cheesecake filling evenly over the cooled crust. Drizzle the cinnamon mixture on top and swirl it with a knife to create a beautiful marbled effect.
  6. Bake to Perfection Bake for 35–40 minutes, or until the center is set and the edges are golden. Allow the bars to cool completely in the pan on a wire rack, then refrigerate for at least 2 hours.
  7. Make & Drizzle the Glaze Whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle generously over the cooled bars.
  8. Slice & Serve Use the parchment paper to lift the bars out of the pan. Slice into squares and enjoy.
