- 3 tablespoons creamy peanut butter
- 160g plain white flour
- 250g white caster sugar
- ½ teaspoon salt
- 120g unsalted butter

- 60g cocoa powder
- Flakey salt for garnish (optional)
Instructions
- Prepare the Baking Tray: Preheat your oven to 180°C/356°F. Line your baking tray with baking paper and grease the sides with a small amount of vegan butter. This recipe uses a small 15cm baking tray with a removable bottom. If using a larger tray, increase the ingredient amounts to maintain the thickness of the brownies.
- Create the Brownie Base: In a saucepan, melt the butter over low heat. Once melted, add the soy milk, sugar, and vanilla extract, combining well. Then add 150g of the chocolate. Remove from heat and continue stirring until the chocolate completely melts into a smooth mixture.
- Mix Dry Ingredients: In a large bowl, sieve the flour, cocoa powder, and salt. Combine thoroughly with a spoon to ensure even distribution of ingredients.
- Combine Wet and Dry Mixtures: Pour the wet chocolate mixture into the bowl with the dry ingredients. Mix together until just combined to form a rich brownie batter.
- Bake the Brownies: Pour the brownie batter into the lined baking tray, spreading it evenly. Bake for 20 minutes until a crackly top forms but the center remains gooey.
- Cool Completely: Remove the brownies from the oven and allow them to cool completely. The crackly top should have developed, while the inside remains moist and fudgy.
- Prepare the Ganache: Once the brownies are completely cool, make the chocolate peanut ganache topping. In a saucepan, melt the remaining 225g of chocolate. Once melted, remove from heat and mix in the creamy peanut butter until fully combined.
- Add the Topping: Pour the ganache over the cooled brownies immediately after making it. Spread evenly across the surface and refrigerate for at least 1 hour to set.
- Serve: Sprinkle with flakey salt if desired, then cut into squares and serve. Enjoy these rich, decadent brownies!
