- 1 box of brownie mix (plus ingredients called for on the box)
- 3/4 cup chocolate frosting
- 15 oz almond bark
- 1 can of cherry pie filling or maraschino cherries
Instructions
- Prepare the Brownies
Bake the brownies according to the package instructions and allow them to cool completely. Ensure you don’t overcook them as crunchy brownies won’t create the right texture for the bombs. The brownies should be fudgy and soft for the perfect consistency when mixed with frosting. - Create the Brownie Mixture
Crumble the cooled brownies into fine crumbs in a large bowl. Add approximately 3/4 cup of chocolate frosting and mix thoroughly. The consistency should be similar to cake pop mixture – it should hold together easily when pressed but not be overly sticky. Add small amounts of additional frosting if needed to reach the desired consistency. - Form the Brownie Balls
Using approximately 1 1/2 tablespoons of the brownie mixture (a cookie scoop works well for consistent sizing), form a ball and then create a hole in the middle. Place one cherry from the pie filling or a maraschino cherry into the hole. Carefully fold the brownie mixture over the cherry or add a bit more mixture on top to completely seal the cherry inside. - Freeze the Balls
Once all the brownie bombs are formed with cherries inside, place them on a parchment-lined tray and freeze for approximately 20 minutes. This helps them firm up and makes dipping easier. - Prepare the Coating
While the brownie balls are freezing, melt the almond bark according to package instructions. Ensure it’s smooth and completely melted for easy coating. - Dip and Coat
Working with one brownie bomb at a time (keeping the rest in the refrigerator), drop each ball into the melted almond bark. Completely coat it, then lift it out with a fork, tapping gently to remove excess chocolate. Place each coated bomb on wax paper and allow the coating to dry completely.
Notes
- If using cherry pie filling, drain excess liquid from the cherries before using them to prevent the brownie mixture from becoming too wet.
- Maraschino cherries work best if you dry them with paper towels before incorporating them.
- For best results, store these brownie bombs in the refrigerator.
- You can customize these by using different flavored frostings or adding a drop of cherry extract to the brownie mixture.
- For a festive look, drizzle with contrasting chocolate or add sprinkles while the coating is still wet.
