Description
A decadent three-layer dessert featuring a buttery biscuit base, creamy Biscoff caramel center, and smooth chocolate topping. This indulgent treat combines the iconic speculoos flavor with the classic millionaire’s shortbread for an irresistible sweet sensation.
Ingredients
Scale
- For the Shortbread Layer
- 1 ½ cups digestive biscuits or graham crackers, crushed
- ¼ cup melted butter
- 2 tablespoons sugar
- For the Caramel Layer
- ½ cup unsalted butter
- ½ cup brown sugar
- ½ cup sweetened condensed milk
- ¼ cup Biscoff spread (cookie butter)
- For the Chocolate Layer
- 1 cup milk chocolate, melted
- ½ cup Biscoff spread (cookie butter)
Instructions
- Prepare the Shortbread Layer: In a mixing bowl, combine the crushed digestive biscuits, melted butter, and sugar until the mixture resembles wet sand. Press the mixture firmly into the base of a lined 9×9-inch traybake tin, creating an even layer. Refrigerate for 30 minutes to allow the base to set completely and firm up.
- Make the Caramel Layer: In a medium saucepan, melt the butter, brown sugar, and sweetened condensed milk over medium heat, stirring constantly to prevent burning. Once the mixture starts bubbling, reduce the heat and continue to stir for 5-7 minutes, or until the caramel thickens and deepens in color. Remove the saucepan from the heat and stir in the Biscoff spread until fully combined. Pour the caramel mixture over the chilled shortbread layer, spreading it evenly. Return the traybake to the refrigerator and chill for at least 1 hour to set the caramel layer.
- Create the Chocolate Layer: Melt the milk chocolate and Biscoff spread together using a double boiler or in short intervals in the microwave, stirring frequently to ensure a smooth consistency. Pour the melted chocolate mixture over the set caramel layer, spreading it evenly with a spatula for a flawless finish.
- Chill and Serve: Place the traybake back in the refrigerator for 2 hours, or until the chocolate layer is completely set. Once ready, remove the traybake from the fridge and use a sharp knife to slice it into squares or rectangles. Serve and enjoy!
Notes
- For clean cuts, dip your knife in hot water and wipe dry before slicing.
- Store in an airtight container in the refrigerator for up to 5 days.
- For a more professional finish, you can add a sprinkle of sea salt on top or drizzle with melted white chocolate.
- Allow the traybake to sit at room temperature for 10-15 minutes before serving for the best texture and flavor.
